Got to cobbling some shit, ended up making a quesadilla with some zero carb tortillas, lean ground beef, potatoes and carrots with some old fashioned Taco Bell seasoning. I had some taco sauce on hand but I went decided to use Nashville Hot Ranch on it, which I stand by. Then of course just some cilantro lime rice over there for the side.

...actually that's a pretty good idea. I'm still missing something on my food plan for later in the week and have everything for it already in the house. :bootynods

I sweated an onion in some olive oil then added some rice, minced garlic, salt, cumin and cayenne pepper and toasted it for a bit before cooking it in some vegetable stock and then adding some canned black beans at the end

That sounds great... I'd probably do about the same tbh. ...plus adding some bell peppers.
